Canadian Campagnarde

The weather has turned cool again so today’s salad is a winter salad. I came up with this during our time in Canada, thus the name. It’s similar to the Salade Campagnarde that I posted on June 6, https://www.nicolatrwst.com/salade-campagnarde/ but the ingredients are more filling to help one fight the elements. In my case, 20 mph winds.
Serves 2.
Ingredients:
Mache salad*
5 oz package pancetta
3 slices of speck or prosciutto
2 medium potatoes
1 heaping Tablespoons plain yogurt
1 Tablespoons Dijon mustard
1 Tablespoons apple cider vinegar
Salt and pepper to taste**
1 Tablespoons of olive oil, if desired
½ onion, fried, if desired
*Mache is a winter salad and I couldn’t find it this time of year so I substituted what I had left over from the week, which was, frissée, baby spinach, a little arugula.
** The pancetta and speck are both salted meats so I don’t add any more salt.
Preparation:
In a large bowl add salad. Place the two potatoes in a steam cooker (Instant Pot) and steam until soft, about 20 minutes. (You can cut the potatoes in half to reduce cooking time) Fry up the pancetta and speck. Let cool. Once the potatoes are done, let cool down till they are comfortable for you to chop. Cube into ½ inch cubes.
Add potatoes, pancetta mixture, to salad. If using a fried onion, add it to salad and mix all ingredients. Add dressing and mix.
Dressing:
In a small bowl, add the plain yogurt and mustard. Mix well. Add vinegar, salt and pepper. Mix well. Taste. If too sharp for your liking, add 1 tablespoon of olive oil to soften.
