Caprese Salad
June 15
This salad is another popular one and you may have your own way of making it. I like to make it with cherry tomatoes and ciliegine, or bocconcini, which are balls of fresh mozzarella.
Serves 2.
Ingredients:
Ciliegine or Bocconcini
1 dry pint cherry tomatoes
5-7 basil leaves
Olive oil to taste
Balsamic vinegar to taste
Salt and pepper to taste
Preparation:
Cut cherry tomatoes in half. Place in bowl. Cut Ciliegine in half and place with the tomatoes. Salt and pepper to taste. (Large ground pepper is good here). Tear basil leaves. Stir all. Add a splash of balsamic vinegar. Add a splash of olive oil. Stir. Add more balsamic and olive oil to taste.
Enjoy.

This is one of my favorites.
Me too! I like it with only olive oil, but my husband prefers the balsamic added. Do you use vinegar?
I love this salad! Looking forward to trying out your recipes.
some are very family friendly.
Definitely a plus!
