Kale Salad

This is one of my favorites from Whole Foods, but when I went to buy it I was told that they weren’t making it right now because they weren’t making full deli menus until the SIP is over. So, here’s my version.
Serves 2.
Ingredients:
Curly Kale
13 half walnuts, roasted
2-3 oz feta
2 Tablespoons olive oil
3 Tablespoons basil olive oil
3 Tablespoons apple cider vinegar
Salt and pepper to taste
Preparation:
Tear the kale in bite sized pieces and message with the 2 tablespoons of olive oil. The messaging breaks down the fibers and makes in less chewy. Place in a salad bowl. Cut half walnuts in half. Add to kale. Break feta into the salad. Mix well. Add dressing. Mix again.
Dressing:
In a small bowl, add the vinegar, basil olive oil, salt and pepper. Mix well.**
**Because this is a simple salad, it all comes down to a nice dressing. For that reason I used a basil olive oil to add a flavor into the mix. You could also use the Standard vinaigrette that I posted on June 1. https://www.nicolatrwst.com/go-to-salad/
