Oscar Party Goodies
This year I’m trying to go a little healthier on the Party snacks. I’m thinking Meryl would thank me. How does she keep her figure?
Menu consists of Roasted Shrimp, Kale chips, and Roasted Garbanzo beans. I’ve recently come across the latter and realized their potential. Because you can use whatever spice you like, you choose the theme. Exotic. South of the Border. Mediterranean. Or simply salty.
Ingredients:
- Can of garbanzo beans
- Salt
- 1-1 ½ Tablespoons of Olive Oil
- Spice or herb of your choice.
I’m making 2 batches one with a mixture of salt, paprika, and chili power and another for my Mediterranean roots (which I have none) with a mixture of oregano and salt.
How to:
Preheat oven to 400. Remove beans from can, wash, and pat dry with paper towel. Remove any skins that come loose. I put the beans in a bowl and drizzle with oil, but you can do it directly on your roasting sheet if you prefer. Put roasting sheet in the oven and cook until brown about 25-30 minutes. Shake pan about every 10 minutes to move the beans around and cook on all sides.
Sprinkle your herb or spice mixture as soon as you remove from the oven.
Note: I have seen these done with a simple flour, salt, and garlic powder mixture where the beans are shaken in a bag with the mixture then put on a baking sheet and drizzled with olive oil. As I’m trying to eliminate flour from my diet, I didn’t try this one, although, I could use garbanzo bean flour if it wouldn’t be too incestuous.

far as healthy nkscas, I did pretty well on that goal, too.a0 I have been enjoying my Spicy Garbanzo Dip and lots of Greek yogurt with Cranberry Relish.
