Radicchio & Pear Salad

This is a simple salad with a big taste. Fresh, it’s another one that’s great on a hot day.
Serves 2.
Ingredients:
1 head of radicchio, small to medium
1 pear
13 half walnuts, toasted
¼ cup crumbled goat cheese
1 teaspoon mustard seeds
4 Tablespoons extra virgin olive oil**
1 Tablespoon lemon juice
4 Tablespoons pomegranate or raspberry vinegar
Salt and pepper to taste
** I like to use lemon olive oil.
Preparation:
Wash and dry radicchio. Slice enough of the radicchio for 2 into thin strips and add to large bowl. Cut pear in half and clean out seeds. Slice thin strips from the center (3 thin slices from each side). Cut these in half lengthwise and lay out on 2 plates like a star. (see photo).
Cut the rest of the pear in thin strips about 1 inch long and add to radicchio. Lightly chop toasted walnuts and add to radicchio. Add mustard seeds to radicchio. Add crumbled goat cheese. Mix. Add dressing. Mix well. Spoon over star of pear slices.
Dressing:
Mix together 4 tablespoons of olive oil, 4 tablespoons of vinegar, 1 tablespoon lemon juice. Salt and pepper.
